In the second season of the show that will begin on 5 June, he traces the roots of authentic delicacies from the heart of north India
Mumbai, June 2, 2017: Taking viewers into a bygone era, Chef Ajay Chopra successfully explores the forgotten delicacies of north India in the second season of the show, that launches on Living Foodz on 5 June.
Following the success of the first season, where Chef Ajay recreated favourite dishes from the region in innovative styles, Northern Flavours is back to entertain, educate and enthral millions across the world. The show will explore north Indian food from the states of Uttar Pradesh, Haryana, Bihar, Himachal Pradesh, Punjab, Jammu & Kashmir, Jharkhand, Rajasthan, Uttarakhand and Delhi.

As a true-blue Punjabi, I had a great time researching about dishes that are centuries old. It was truly fascinating to learn about the myriad global influences on the cuisine of Northern India - from the Mongols of Central Asia to the Chinese, as a part of the Silk Route. Deeply influenced by martial traditions and travel, it was an overwhelming and enriching experience. All these diverse traditions have been preserved by cooks and homemakers over centuries. I look forward to bringing the earthy flavours from Punjab, Haryana, Uttar Pradesh, Bihar, Jammu & Kashmir, Himachal Pradesh, Jharkhand, Uttarakhand, Rajasthan and Delhi to viewers, with a ‘double tadka’”, says an enthusiastic Chef Ajay Chopra.

North Indian cuisine, though characterised by a lot of regional variety, has come to become loved by Indians, with dishes like butter chicken, tandoori kebabs, and dal makhani, amongst others, attaining national fame. On the show, Chef Ajay revisits various cooking techniques of curating dishes like Modur Polav, Kalari Kulcha, Potato Curry Puffs, Kabuli, and Bhuna Gosht, and brings them to life in his kitchen, using the same techniques and traditional ingredients.
The show is interspersed with interesting anecdotes by Chef Ajay Chopra behind the revolutionised delicacies of north India. For example, north India has been a gateway for travellers, scholars and warriors and has become the perfect amalgamation and breeding ground for the various food cultures of the nation. Northern Flavours aims at discovering this fusion of cultures, which has culminated beautifully, over time.
Northern Flavours Season 2, produced by Greed Goddess Media, rediscovers the culinary secrets of authentic north Indian cuisine.
